Sweet Potato Breakfast Hash

I promise I eat more things than sweet potatoes…..

Alright. It’s pretty simple… You can’t mess it up. First you’re gonna buy some sweet potato tots at the grocery store then you’re going to crack 6 eggs after cooking 5-6 pieces of bacon in the same pan. Have some green onions on the side ready to chop and top your eggs with and you are good to go.

You’re going to make your eggs a little different than the normal scramble… if you’ve ever seen Gordon Ramsey‘s eggs that’s what we’re going to do! Wipe down your pan after the bacon and run some butter over it, warm the pan up on high and then place the burner on low, mix in some whole fat yogurt, two heaping spoonfuls, and start stirring quickly on low heat. You’re stirring is going to be arduous but to speed it up you can bring the heat up for 5-10 seconds and back down to low a couple times. The eggs should start to curdle and with just a little more time they’ll be good! Once they have the mushy but cooked consistency, sprinkle a little cheese on top and serve with chopped green onions!

Place your egg dish on top of the air-fried sweet potato tots and enjoy! One of our favorite breakfast dishes.
